These are some serious cupcakes. Let's start with the cake. These are devil's food cupcakes (made with a dark, Dutch-processed cocoa) with pistachio meal. The filling is a real milk chocolate and pistachio truffle. The frosting is an extra virgin olive oil mousse made with semi-sweet and dark chocolates. On top is a sprinkling of pistachio dust and chopped pistachios. You think you've tasted chocolate? No, not until you've tasted these.
Picture here are the homemade milk chocolate pistachio truffles used to fill the cupcakes.
The cocoa powder is Droste, and all other chocolate is Lindt. Just FYI.
